148 Years of Accra: A Call to Preserve Our Heritage

Accra City Hotel has commemorated the 148th anniversary of the ‘City of Accra’ with a call for urban lifestyle renewal and preservation of heritage.

The occasion, taking place on March 19, 2025, celebrated the establishment of the city in 1877 and gathered important participants to contemplate Accra’s legacy while outlining strategies for its forthcoming years.

Dignitaries from the Accra Metropolitan Assembly, Civil Society Organisations (CSOs), financial institutions, and the media were present to grace the occasion.

In a brief background note, it was indicated that Accra, originally established by the Ga people, thrived as a trade hub long before the arrival of European settlers.\xa0 The people traded in salt, fish, textiles, and agricultural produce, laying the foundation for the city’s growth.

At the time, its strategic coastal location and, later, the creation of the first port in Jamestown further enhanced Accra’s reputation as a centre of commerce and interaction.

Executive Director of Accra City Hotel, Nana Afriyie Adu Sarkodie, used the occasion to call for urgent restoration and protection of the city’s polluted water bodies, such as the Odaw and Korle lagoons.

“As a socially responsible corporate entity, we partnered with the Korle Klottey Municipality to desilt the Paloma gutter. When you go to London, you see the Thames; in France, there’s the Seine. But here, we continue to pollute the Odaw and Korle and that must change,” he said.

He announced a sustainability initiative where GH₵1 from every sale at the hotel will be dedicated to supporting the restoration of these rivers. “We want to see canoes and regattas on our rivers again,” he added.

Presidential Advisor on Diaspora Affairs, Kofi Okyere Darko (KOD), underscored the Accra city day celebration as a fitting tribute to the city’s enduring cultural and historical significance.

He praised organisers for promoting civic pride and engaging the diaspora in the city’s development narrative.

Adding to the call for transformation, Roberta Amoah, Greater Accra Regional Director of the Ghana Tourism Authority (GTA), advocated for a united effort to build a modern, smart Accra without losing its identity.

“As we work towards building a smart city, we must not lose sight of what makes Accra special — its history, heritage, and cultural features,” she stressed.

She urged all stakeholders, government, private sector, and citizens to take collective responsibility in preserving the city’s legacy while embracing innovation.

The Abola Mantse, Nii Ahene Nunoo III, also called for intensified efforts to rid the city of filth, emphasising that a clean Accra is the shared duty of all. “Keeping our city clean is not a one-man job; it requires all of us ,” he said.

The City of Accra @ 148 celebration not only honored the city’s founding fathers but also served as a platform to spark meaningful dialogue on urban renewal, environmental sustainability, and cultural preservation.

As the city continues to grow, stakeholders say a united front is key to building a cleaner, smarter, and more resilient Accra for future generations.

Liu Xiaoqing Admired by Co-Star Geng Dayong: "Timeless Beauty Defies Decades"

Chinese actor Geng Dayong, 45, recently shared that during his collaboration with 75-year-old actress Liu Xiaoqing on the film “Meng Bao Zhu Gong: Wu Shi Sui Hun Chong,” he was struck by her youthful energy.

"She still exudes a youthful energy, like a young woman," he said in an interview with Ifeng . "During our work together, I could feel that youthful vibe in her tone and subtle expressions."

The show launched on February 28th and comprises 57 episodes, with each episode being less than three minutes long. It targets middle-aged viewers and attracted tens of thousands of watchers on its first day.

While some praised the series for its dramatic appeal, others found the content formulaic, adhering to the popular trope of "a wealthy man falling in love with a poor woman." This theme has become widely popular in the Chinese short film industry over the past year.

Liu is a celebrated icon in Chinese cinema, known for her iconic roles in "Wu Zetian," "Huoshao Efang Gong," "Huo Fenghuang," "Hibiscus Town," and "A Dream of Red Mansions."

In a video posted to her social media last year, Liu shared that her 70s marked a time for new ventures, and she is open to exploring fresh opportunities. She believes she can still portray any character, except for male roles, adding: "Whether young or old, thin or fat, as long as it’s a role I haven’t done before, I can bring it to life."

Having spent 50 years in the industry, Liu primarily focuses on the distinctiveness of the character when choosing scripts, irrespective of the character's age or their role as a protagonist or antagonist.

Nagabhushana's 'Vidyapati': Emotions Rescue a Wobbly Script

Slapstick comedy is a style of humor that provided early acknowledgment for numerous key figures within the Kannada film sector, which eventually evolved into substantial acclaim and fan bases. This comedic approach helped elevate comedians from minor parts in protagonist-focused movies to starring roles. An example of this progression includes Nagabhushana, an actor who initially achieved prominence through secondary performances before transitioning regularly into leading-man positions over time.

'Vidyapati' is a Kannada movie with Nagabhushan playing the main role. Co-starring alongside him are Malaika Vasupaal from 'Upadhayaksha' and Garuda Ram known for his part in 'KGF'.

The trailer of 'Vidyapati' attracted significant interest due to its humor, editing, and compelling storyline. The scene featuring Nagabhushana confronting Garuda Ram, the villain of the movie, brought back memories of the legendary finale between Shah Rukh Khan’s character Rahul and Thangabali from the hit 2013 film ‘Chennai Express’. However, will this production elevate Nagabhushana from being just an entertaining sidekick to becoming a notable leading man in Kannada cinema? We shall see!

Siddhu, also known as Vidyapati (played by Nagabhushan), is a carefree individual from a humble yet diligent household with ambitions for an opulent lifestyle. Upon falling deeply in love with upcoming megastar Vidya (portrayed by Malaika), he deceives her into marriage through a tangled net of falsehoods. Along this journey, he leaves behind his kin and companions without hesitation—this sacrifice being inconsequential compared to the luxurious existence he seeks alongside his spouse’s wealth and income.

One night, as Siddu goes on a date with his wife, they encounter Jaggu (Garuda Ram), a well-known criminal. This meeting concludes with Siddu failing to protect Vidya’s dignity and ending up battered while attempting to escape from the predicament. Feeling humiliated by her spouse, Vidya opts to thrust Siddu back into abject poverty, stipulating that he must defeat Jaggu before she will let him come back into their lives. How does Siddu manage to reintegrate himself into Vidya's world? And what insights does he gain along this journey? These queries drive the narrative of the movie.

In the heart of this emotionally charged action-comedy lies the complex nature of Siddu and his relentless pursuit of wealth, which forms the crux of the narrative. This journey unfolds across multiple experiences throughout the movie. The connections between Siddu and key figures such as his spouse Vidya, his father, his stepmother, and his lifelong buddy significantly shape both his development and the viewer’s connection to him within what can be described as an episodic storyline.

The recent triumph of the Tamil movie "Dragon," starring Pradeep Ranganathan, continually highlighted that when viewers resonate emotionally with what’s happening onscreen, they may overlook various imperfections—this insight might also apply to this film. Similarities such as complex protagonists achieving salvation, tumultuous connections, and relying heavily on recognizable feelings suggest that "Vidyapati" shares potential with "Dragon." However, this doesn’t imply it lacks flaws; quite the contrary.

Esham and Haseen, the writing-directing pair, appear to have crafted an entire script around a compelling single line but opted for a very conventional approach in bringing it to life. The lack of creativity in execution serves as a significant shortcoming. Additionally, the movie fails to deliver substantial resolutions to any of the connections formed throughout the story. Given that these directors previously created something as distinctive as 'Ikkat,' this new work seems less like a personal endeavor and more akin to a routine task.

Nagabhushana puts forth considerable effort to shoulder the film single-handedly, with much reliance placed on his performance. During the initial part of the movie, many of his jokes hit their mark and elicit laughter; nonetheless, some scenes feature overly exaggerated acting that feels out of place. Nevertheless, Nagabhushana redeems himself in the latter portion through his nuanced portrayal of emotionally charged moments, which reaffirms his capability as a leading actor in Kannada cinema.

It’s surprising how little screen time Malaika Vasupal gets despite playing the titular character, Vidya. She appears in just a few scenes but performs adequately within them. On the other hand, Garuda Ram, who takes on the role of the villain Jaggu, fails to impress with his acting.

Special recognition goes to Daali Dhananjay for his extended appearance as the enigmatic Anaconda, a martial arts master whose performance brings some of the finest scenes in the movie. The introductory fight scene featuring Anaconda is exceptionally staged and flawlessly performed by Dhananjay, eliciting applause and enthusiastic reactions from viewers. Viewed independently, Anaconda’s tale has potential as an intriguing project; however, it would require creators to adopt a fresh strategy when developing her background.

Among all the technical departments, the music department shines uniquely. Composer Bossmode successfully leads viewers through a script that often veers off course. The cinematography and editing fall short in various areas and barely reach an average quality level.

In general, if you anticipate a tale akin to David versus Goliath based on the trailer, or something reminiscent of Shah Rukh Khan’s Rahul confronting Thangabali scene from 'Chennai Express,' then what we have here is merely a visual parallel. Nevertheless, even with all its shortcomings, ‘Vidyapati’ remains an easygoing, casual watch—particularly appealing to viewers who found enjoyment in the humor and emotive moments hinted at in the preview.

This Week in PostMag: Exploring China's Salt Capital and Cruising the Mighty Mekong

Christopher St. Cavish talks China's 'salt capital', David Swanson leads us down a river cruise and Bibek Bhandari remembers 2000s-era Beijing

I was scrolling through Instagram, as one does, when a particularly arresting image stopped me. Roughly hewn wooden beams and rafters holding up a high ceiling. Puffs of steam caught in the light. A floor blanketed in white snow-like powder. "I really thought this was AI or game art" read one comment.

In fact, it was a photograph of a salt well in Sichuan province posted by Shanghai-based writer Christopher St. Cavish - the first in a carousel of photos from a week-long research trip to Zigong, once known as China's "salt capital", for an episode to air on his newly launched YouTube channel with photographer Graeme Kennedy. I messaged him immediately. It sounded like a story too good to miss, an expertly woven tale of how centuries of history can shape the way we eat today. The piece that came from it - this issue's cover feature - is accompanied by a striking image of Sichuan's salt drilling fields, taken by Swiss geologist Arnold Heim in 1929, along with photos of contemporary Zigong that Kennedy shot earlier this year.

Bibek Bhandari transports us to the Chinese capital (and back to the mid-noughties) as he chats with Glen Loveland, the American author of the recently published Beijing Bound . In 2007, Loveland moved to Beijing, which he describes as unexpectedly open. My first visit there was three years later and it was exactly that feeling that convinced me to make the move from New York. For Loveland, this openness led to a self-described gay awakening, and while I didn't have the same story, reading his made me recall my own early years in the city and the particular energy of mainland China at that moment.

The rest of the issue takes us on a tour around Asia. Traversing Cambodia and Vietnam, David Swanson takes a cruise down the Mekong on the AmaDara where he reckons the region's violent past with its present. It's a beautiful and powerful journey that juxtaposes megacities against bucolic rural scenes.

In Osaka, Julian Ryall gets a sneak peek of the Expo 2025. He previews its many pavilions - I'm particularly intrigued by the Saudi Arabian one, which Ryall describes as "a tangle of alleyways, sheltered courtyards and water features like oases". I've never been to a World Expo, but it turns out this is my year. I'll be in Osaka in May. And you?

Masa Kemerdekaan Indonesia:

Mengapa Girik Perlu Dikonversi?

  • Girik tanah asli.
  • Kartu Keluarga (KK).
  • Kartu Tanda Penduduk (KTP).

Unveiled: Ancient UAE Hunting Techniques from the Pre-Pottery Neolithic B Era

AMMAN — Early in 2022, archaeologists uncovered eight habitation areas in southeastern Jordan. These locations are closely linked to eight large-scale hunting installations known as desert kites. The dating evidence indicates that both the settlements and these hunting structures can be traced back to the late Pre-Pottery Neolithic B period.

The archaeological finds, primarily consisting of numerous stone tools, exhibit remarkable uniformity and consistency across all locations.

"Based on the distinctive features of the complete stone tool collection, a new regional technological complex named 'Ghassanian' has been identified for these desert fringes of the Fertile Crescent," stated French archaeologist René Cressard.

Cressard mentioned that a significant number of arrowheads were found across all occupational strata at sites JKSH F19, P52, and F15. These arrowheads were crafted from tiny, high-quality flint blades; some might have been brought in through trade, with others being fashioned out of quartzite.

The archaeologist mentioned that the debris from small, finely grained chert and quartzite blades appears to be predominantly used for this particular manufacturing process.

During the preform stage, blanks are modified using direct, inverse, or bifacial retouch with a soft stone hammer. They are later refined through pressure flaking, followed by final invasive retouch to complete the tool.

As seen from a typological perspective, these artifacts found at the Jibal Al Khashabiyeh sites share similarities with those recognized in the Southern Levant during the Final PPNB period, particularly regarding single-stemmed blades like the Jericho, Byblos, and Amuq varieties," Cressard noted. "They also resemble items from the Late Neolithic era characterized by unifacial or bifacial single-stemmed or barbed and stemmed tools, including examples like the ha-Parsa, Nizzanim, and Herziliya types.

Various kinds of arrowheads discovered at the Jibal Al Khashabiyeh sites might represent another significant feature of these collections and the identified technological complex.

A deeper analysis of the Jibal Al Khashabiyeh sites will provide essential insights into the regional chronology and typology, as well as facilitate comparisons with other parts of the Levant from the same era," Cressard observed, noting additionally that the flint utilized for making blades is locally sourced and appears as medium-sized slabs scattered across the present-day regolith.

At the JKSH P52 location specifically, numerous small, blade-like daggers were discovered clustered in the outer area of the settlement, closely associated with substantial amounts of flakes resulting from bipolar flaking techniques.

Cressard explained that these daggers went through various phases of production, with many appearing to be completed. He also mentioned that some may have fractured during manufacturing, possibly in a designated workroom designed for such tasks.

It would be useful to examine potential signs of usage on both the bifaces and the blades to determine if particular functions can be linked to each type of tool.

"As evidenced by their association with faunal remnants, the utilization of either or both seems quite plausible. Specifically, curved maces represent a distinct category of tools within the settlement of Jibal Al Khashabiyeh during this period. These items appear to have been used alongside kite structures, and currently, no similar examples are documented across the Near East," emphasized Cressard.

The archaeologist observed that this level of detail might indicate a specific use for these tools, particularly in handling items obtained from hunts.

The initial findings from the microscopic wear analysis of the chipped stone tools at site JKSH P52 offer promising avenues for further investigation into how we understand the inhabitation of this location and the societal as well as economic structure of the hunter groups linked to desert kites, according to the researcher.

So far, initial findings indicate that within the wide range of activities depicted, the numerous processes involved in handling animal products seem to be notably prominent.

"The ongoing research aims to achieve several objectives: 1) outline the complete range of functions and technical procedures performed using this gear; 2) deepen our comprehension of how animal remains were processed onsite, particularly concerning specialized gazelle hunting activities such as butchering and leatherworking; 3) ascertain if distinct areas for specific tasks can be distinguished both inside and across various sections," Cressard stated.

Hong Kong Designs Blend Tradition, Symbolism, and Sustainability in Global Edition (English)

Heritage and urban living inform a collection of locally designed and crafted furniture on show in Milan, Italy, as part of Hong Kong Interior Design Week

Nothing sparks collective nostalgia quite like Hong Kong's historic "ding ding" trams . But could you imagine rekindling those memories in your own living room?

Designer Eugenia Yiu did, upcycling waste glass from old carriage windows into an elegant piece of designer furniture.

Incanto di Hong Kong, the drinks cabinet produced by Yiu, co-founder of Bill's Design, is one of 10 bespoke pieces selected by the Hong Kong Interior Design Association to showcase the city's design and manufacturing prowess during Hong Kong Interior Design Week (HKIDW) 2025. The curated exhibition, titled "Urban Reflection", will debut in Milan, Italy, this month, and return to Hong Kong in June.

Do you have questions about the biggest topics and trends from around the world? Get the answers with SCMP Knowledge , our new platform of curated content with explainers, FAQs, analyses and infographics brought to you by our award-winning team.

According to Jao Cheuk-ming, co-chairman of HKIDW 2025, the collective concept explores the significance of The unique cityscape of Hong Kong , where dense populations and towering skyscrapers create a complex dance of illumination and darkness. He explains, “This dynamism mirrors the lively spirit of the city and underscores the sophisticated connection between urban existence and its natural setting.”

A focus on sustainable materials ranked highly among the selection criteria.

Jao explains, “Furniture that includes environmentally friendly finishes demonstrates a dedication to equilibrium and reverence for nature.” He adds, “Designers strive to create items that are not only aesthetically pleasing and long-lasting but also ethically sound—by employing sustainable resources, we can expand the horizons of innovation.”

Yiu’s creation employs two distinct manufacturing technologies. Initially, train window glass is ground down into tiny fragments before being mixed with a specialized combination of minerals and polymers created by CycleCore. This composite mixture is subsequently shaped to create the main body of the bar cabinet, which is currently in production and available for purchase at HK$18,000. After setting, curvaceous wooden doors coated in metallic paint are attached to the front, blending classic Chinese woodworking aesthetics with contemporary materials to refresh the overall look.

“Designers invariably aim to create things that you adore and treasure,” Yiu remarks. “Being a native Hong Kong designer, I recognize the significance of maintaining our cultural legacy and traditions. Given that trams are such emblematic symbols of our city, I believed that infusing new vitality into items previously considered waste and highlighting their beauty could serve as an excellent means to narrate our tales.”

Certain displays include notable Asian features, with a specific emphasis on Chinese elements like the craftsmanship involved. Max Lam Designs 'coffee table alongside the symbolism of traditional paper fans within modular seating created by Craft of Both.'

The O.N.N.O. (Old New New Old) coffee table, created by designer Max Lam and constructed by Hong Kong craftsman Twenty One from Eight, merges traditional mortise and tenon joinery with modern design elements. Made of American maple wood, this distinctive piece includes a sleek slim drawer equipped with a roller shutter door along with an understated curved pull, supported by graceful almond-form legs.

"It's important to keep these techniques going so that more people can understand the traditional way of timber construction without using screws or nails," says Lam. "It's a beautiful and smart way to build modern furniture."

Christina Stand aloft, who co-founded Craft of Both describes their Moon Series chair as a "combination ofurniture, fan, and design."

The chair, made in collaboration with manufacturer MADE, is crafted from solid oak with detachable mesh "fans" embedded on each side that can be folded or unfolded at will.

"The paper fan is a geometrically pure and robust form, but also has lineage and heritage, particularly in China, as a tactile, expressive device that can inform privacy, movement, air, colour and texture," she says. "The Moon Series is the product of these wonderful frictions and dialogues."

Jay Jordan, Craft of Both's other co-founder, adds that the process, motion, sound and sensation of snapping on fan modules "has been carefully engineered to create a tactile experience for the user".

Interpreting the significance of bamboo in a different way is Dennis Cheung Hoi-kwan, of Studio RYTE. His Benboo lighting trio comprising table lamp, floor lamp and wall lamp "has the connotation and meaning of bamboo", depicted in copper.

"In Chinese culture bamboo is associated with prosperity, growth and strength ," he says.

Actual bamboo wouldn't be stable enough for this lighting design, so Cheung teamed up with Ricardo Lighting, a manufacturer specialising in copper, a recyclable material that can be crafted in tubular segments resembling the form and texture of the plant's stalk.

In a collaboration between O&O Studio and Radd, designers Eric Chan and Suzanne Li recreated the beauty of a Chinese scholar's study room with their Yi Si desk and bench.

In a hexagonal design representing "six directions", symbolising harmony and completeness, the desktop is suspended on outwardly folded hexagonal legs, while the bench design is reversed - embodying, Chan says, "the philosophy of yin and yang complementarity".

"The streamlined wooden strip on the desktop, paired with rattan cup holders on both sides, creates simple undulations, allowing people to feel the flow of ink fragrance with each stroke," adds Li. "The bench, with its rattan surface, is both comfortable and breathable, showcasing the perfect fusion of traditional craftsmanship and modern life."

Also with sustainability on his mind, Stepan Gudev, of Gud Gud Studio, crafted his two Aeon Chair exhibits using remnants of upholstery textile scrounged from fabric shops in Sham Shui Po. He hand-cut the cloth into thin strips before weaving it around a metal frame in a colour-coordinated pattern.

"Hong Kong's economy has been highly influenced by the garment industry and with sustainability now a business imperative, I thought this could be an interesting bridge between the past and the future," says the designer, who collaborated with One Production.

While his handcrafted process ensures every piece is bespoke, Gudev's vision is to make each one even more personalised by using items from the user's own wardrobe or home furnishings.

"Giving second life to fabrics you've disposed of to create your own chair is an expression of your life, and keeps the connection ongoing," he says.

Two exhibits explore the possibilities of 3D printing for furniture.

The Clover Collective, by ARTA Architects, is a set of stools designed to fit together as if segments of a four-leaf clover.

"When we approached this design, my partner, Wong Tat-lai, and I wanted to include a communal element. We decided to create modular furniture that you can enjoy with friends," says Arnold Wong Yok-fai, co-founder of ARTA Architects. "The four-leaf clover is a historical plant many people love - we thought it symbolised hope, faith, love and luck."

Designed in five layers of elegant curves, each stool is completely 3D printed, using ABS (acrylonitrile butadiene styrene), a material made from recycled - and recyclable - plastic.

"Compared to traditional production methods, the process is low waste, time and labour efficient," says Wong, who collaborated with Starz Origin on this project. "Also with marketing in mind, we wanted to design a piece that can be mass-produced, at an affordable price."

Starz Origin is a 3D-printing start-up established by Starz Pasha co-founders Jay Leung and Maggie Mo in 2023. The couple's exhibit for Milan takes sustainability a step further by incorporating coffee grounds and recycled plastic into the manufacturing process.

The coffee table in the three-piece It's Caffeine is set on a metallic-look, eco-friendly T-ABS 3D-printed base. To make the top, coffee grounds are mixed with a resin-like substance and poured into a mould. "Once dried, we do the sanding and polishing, leaving the coffee's natural brown colour intact," Leung says.

Two chairs in different designs are also 3D printed, clad for seating comfort in either synthetic leather or fabric, both from Kinland.

"We wanted to do something that combines thoughtful design with eco-conscious materials, offering both beauty and responsibility," Leung says.

Mo adds that the current set - coffee table retailing for HK$4,650, and the chairs for HK$5,050 and HK$6,250 - is "just the beginning" in an It's Caffeine range that will feature tableware, accessories and other homewares.

Bean Buro founding directors LorEne Faure and Kenny Kinugasa-Tsui aimed to bring the calming essence of nature into the living room through their Stoneflow sofa, manufactured by Decca.

"The curves and forms are intended to evoke a sense of sensuality and comfort, inviting users to take a moment for themselves," Kinugasa-Tsui says. "We see the Stoneflow not just as a sofa, but as the starting point for a whole collection that embodies our vision of nature's beauty and comfort," adds Faure.

And for a multisensory experience in the home or workplace, Joey Ho, design partner at PAL Design Group , conceived the Egg-citing rocking lounger for his exhibit.

Inside an egg-shaped metal frame, a high-density foam bed is sculpted to cradle the human body. Behind the head rest are two small speakers, and above it a transparent LED screen.

Ho's idea is that the audio and visual elements would be wirelessly connected to meditative apps on the user's phone, so that you climb in, recline and gently rock, being lulled by, say, bird song, or scenes of a forest or ocean.

Manufactured by Profilia of West Germany (Far East), Egg-citing is definitely not intended as another way to catch up on work emails.

"I hope it would help us to dream more," says Ho.

Organised by Hong Kong Interior Design Association and the government's Cultural and Creative Industries Development Agency, "Urban Reflection" will debut at the Loft of Superstudio PiU in Milan, Italy, April 7-13, 2025. After returning to Hong Kong, the exhibition will run from June 19-22 at M+ Art Pavilion, West Kowloon Cultural District. For more information go to the event website

Bacaan Niat Puasa Sunnah

Nawaitu Shauma Ghadin 'Ansattat Tsulasi Min Ash-Shawwal Sunnataan Li Allah Ta'ala.

Artinya: "Saya berniat untuk berpuasa sunah selama 6 hari di bulan Syawal demi Allah Ta'ala."

  • Niat Puasa Senin

Nawaitu sauma yaumil ithnayni sunnah li'llahi ta'ala.

Penerapan peraturannya sungguh tegas.

XO Sauce: How a Cantonese Delicacy Conquered the World

The much-loved iconic sauce from Hong Kong is adding flavor to the dishes listed on Michelin-starred Western restaurant menus across the globe.

Within the stylishly minimalistic confines of FZN crafted by Björn Frantzen in Dubai, head Chef Torsten Vildgaard presents a delicate serving of XO sauce paired with the primary dish featuring barbecued duck and foie gras. This rich sauce boasts profound umami notes harmoniously mingled with a touch of caramelize sweetness and an underlying earthy nuance, subtly infused with smokiness—a delight when spread over the soft bread served beside the duck.

It appears to be an improbable seasoning to encounter from a renowned chef. BjOrn Frantzen It turned out that XO sauce – an indispensable item in Cantonese pantries – initially gained prominence at the three-Michelin-starred Nordic-Asian restaurant Frantzen in Stockholm. Later, it also made its appearance at their sibling establishment, Zen, located in Singapore.

At FZN, the 27-seat restaurant that launched in November at Atlantis The Palm, Vildgaard (who was formerly in charge of research and development at Noma in Copenhagen ) prepares the XO sauce by finely mincing garlic, shallots, smoked celeriac, chanterelles, red chilies, and shiitake mushrooms before separately deep-frying each ingredient. Afterward, he incorporates a concentrated kelp dashi to meld all components, mixing it with the flavorful fried oil. Besides serving it as a dip for bread, he occasionally employs it in sauces to enhance their savory profile.

We selected this dish for our launch menu as it beautifully enhances the primary meal," explains Vildgaard. "Additionally, it’s vegetarian, which makes it an excellent choice that caters to most of our diners. I am particularly fond of recipes that showcase the botanical world.

FZN is among the growing list of leading eateries worldwide that have created their own renditions of Hong Kong’s iconic XO sauce. Despite its precise beginnings remaining unclear, The XO sauce was developed in the 1980s. , numerous people think according to an anonymous chef Spring Moon at The Peninsula hotel in Hong Kong.

The chef christened it "XO chili sauce," where "XO" typically denotes an "extra old" cognac, symbolizing top-tier quality associated with 1980s Hong Kong. This condiment is genuinely crafted using premium components like conpoy (dried scallops), dried shrimp, and Jinhua ham from Zhejiang Province. It remains contentious whether a sauce qualifies as XO without incorporating these essential elements. Nonetheless, culinary professionals across the globe assert they've drawn inspiration from this quintessential export of Hong Kong’s gourmet scene.

Chefs are innovatively exploring Chinese culinary methods and components, frequently blending these elements with others to craft distinctive recipes designed to attract a wider range of diners.
Torsten Vildgaard

Nevertheless, Vildgaard observes increasing enthusiasm for more than just XO sauce. He notes, “Outside of Asia, Chinese cuisine is becoming increasingly popular, particularly among culinary professionals. In recent years, there has been a notable rise in interest regarding various regional Chinese cuisines. Chefs are exploring traditional Chinese cooking methods and ingredients, frequently blending them with other culinary traditions to develop innovative dishes that attract a wider range of diners.”

Dabiz Munoz , named world's best chef between 2021 and 2023 by the Best Chef Awards, was one of the first in European fine dining to take inspiration from Chinese cuisine, going so far as to name his three-Michelin-starred restaurant in Madrid, DiverXO, after the sauce with which he "fell totally in love" on first taste.

Other notable chefs like Junghyun "JP" Park have also featured XO sauce on their menus, including serving Japanese butterfish paired with scallop XO sauce at his establishment in New York. Atomix , which placed sixth on the World's 50 Best Restaurants 2024 list. XO has also made its way onto the prix-fixe menu at Atoboy, Atomix's informal sister restaurant, where it has been paired with scallops and cara cara orange.

At Hom, a restaurant located within the stunning white temple-style Sawan Pavilion at the InterContinental Phuket Resort, head chef Ricardo Nunes crafted an XO sauce primarily utilizing locally-sourced ingredients such as dried Thai scallops, palm sugar, cured meats, tomato tamari, and black garlic vinegar. This sauce was then applied to wild boar belly which had undergone fermentation for two days with koji and blackened durian “to amplify the umami and delectability of the meat,” according to Nunes.

At the Two Michelin-starred establishment The Clove Club in London, Chef Isaac McHale He learned how to prepare XO sauce at the renowned Sydney-based Cantonese seafood restaurant, Golden Century, where he would often enjoy pipis—clams found in South Australia—with this flavorful sauce. To put his personal spin on the condiment, McHale dries out the adductor muscles extracted from scallops as an internal substitute for conpoy. This customized XO sauce then complements a dish featuring fresh white crab meat alongside sprouted grains and walnuts.

The breadth of Chinese cuisine is such that one would need several years of study to truly do it justice and convey adequate respect and admiration.
Stefan Doubek

Several eateries are now venturing into retail sales: Noma Projects, the Danish eatery’s store designed for home chefs, has developed a vegan XO sauce made from smoked pumpkin, sun-dried tomatoes, roses, and wild peppercorns. This product can be purchased online during its seasonal availability.

However, even as Chinese culinary arts gain recognition among global chefs, their impact is slower to spread in certain regions. Stefan Doubek, owner of his namesake, two Michelin-starred restaurant in Vienna which specializes in open-fire cooking, notes that genuine Chinese cuisine remains largely unfamiliar in Austria.

He explains, “If it does exist, it has only recently gained attention from chefs here over the past two to three years.” He further notes, “Given the vastness of Chinese cuisine, one would need several years of dedicated study to properly honor and appreciate it. While adaptations of Chinese food tailored to suit European tastes have become common in Austria since the 1990s, they aren’t considered truly authentic.”

After sampling the sauce at a restaurant in Thailand, Doubek created his own rendition of XO.

"Following months of experimentation, I succeeded in crafting a sauce that brings the thrill of novel flavors while also providing a comforting familiarity,” he explains. “This condiment completely embraces the inherent taste and evolves simultaneously. These aspects are precisely what I seek in my recipes.”

For his sauce, Doubek utilizes dried residual scallops, shrimp, and mussels—incorporating even parts typically discarded, like scallop roe. He processes each ingredient uniquely: after soaking the dried mussels in sake, he steam-cooks them before sautéing them in peanut oil. Subsequently, all components are combined and fried in cooking oil until they meld together, with the mussels imparting robust umami flavors throughout.

He mentions that his sauce consists of roughly 25 ingredients and requires about six days to prepare," he states, accompanied by a fleeting grin. "This is likely the sole recipe he doesn’t readily disclose to everybody.

Group Urges USM to Halt Bujang Valley Talks Amid 'Hindu-Buddhist Agenda' Concerns

GEORGE TOWN: A Malay non-governmental organisation has called for Universiti Sains Malaysia to revoke an upcoming international conference focused on the ancient Kedah Tua civilisation, arguing that it propagates a Hindu-Buddhist perspective of Malaysian history.

The Pertubuhan Kebajikan Islam dan Dakwah Islamiah Malaysia (Pekida) asserted that the conference would promote a distorted view of history, specifically regarding the religious roots of Kedah Tua.

Ahmad Yaakob Nazri, a spokesperson for Pekida, stated that the event was specifically designed to demonstrate that Kedah Tua has roots in both Hinduism and Buddhism.

He stated that ancient civilizations in Kedah worshipped a single deity, and that leaders in Kedah Tua were influenced by Arab merchants well before being exposed to Hindu or Buddhist beliefs.

Pekida members along with those from Gabunan Hak Bela Insan staged a demonstration against the conference at the entrance of USM following Friday prayers.

They were against concentrating efforts on Sungai Batu, often known as Bujang Valley, due to previous digs uncovering remains that certain archaeologists believe belonged to Hindu temples.

Yakqub rejected the idea that the ancient temples found in the Bujang Valley suggested an early presence of Hinduism, stating that these structures bore little resemblance to typical Hindu shrines.

“We went to Bujang Valley and looked at the structures. They’re just square pillars, not like Hindu temples,” he said.

He questioned the presence of foreign academics as speakers in the conference, specifically pointing to a keynote speaker described as a French-born professor who had once been a Buddhist monk in Thailand.

“Why is a white Buddhist scholar the keynote speaker? Why is the panel full of foreigners from Indonesia, Cambodia and India?” he asked.

He accused USM of sidelining Malaysian scholars, saying respected archaeologist Mokhtar Saidin was only added to the list of speakers after pressure from Pekida.

Yakqub said Pekida’s demands were for the conference to be cancelled and a public debate on Kedah’s history to be held between the group’s own “experts” and “orientalist” scholars.

He also threatened to lodge a police report if the conference goes ahead.

USM deputy vice-chancellor (academic and international) Narimah Samat said the university received a letter on the conference from Pekida last month and would address the issue internally.

“We welcome participation from all parties and are open to holding academic discussions on the matter,” she said.

Narimah mentioned that the conference is taking place in partnership with the National Heritage Department and various other organizations, coinciding with the nation's ASEAN chairmanship.

When asked whether the event might be canceled, she chose not to comment but emphasized that the issue would be discussed internally.

Azlan Amran, the USM deputy vice-chancellor for industry and community networks, stated that the event was based on research and did not show bias toward any particular race or religion.
